The Consul General took part in activities to promote the cultivation of traditional, sustainable corn in July at the Mexican restaurant Maizal in Toronto.
In the context of the event known as “Noche de Maiz” (“Corn Night”), the organizers promoted the traditional methods for harvesting corn in our country and the diverse range of dishes prepared with this ingredient that form part of Mexico's delicious cuisine.
The promotion project is supported by local Mexican farmers dedicated to harvesting and drying organic corn on Ontario's farms. The recognized chefs Iván Wadgymar and Gabriela Ituarte have established one of Ontario's few restaurants offering authentic Mexican cuisine, and also collect the compost generated by the restaurant for reuse in organic fertilizers.
At “Noche de Maiz”, the producers explained the process they follow to obtain the fresh masa that is subsequently used to make tortillas, tamales and atole. Their efforts to promote a sustainable food culture have earned these restaurateurs the Premier’s Award for Agri-Food Innovation Excellence, awarded by the Province of Ontario's Ministry of Agriculture, Food and Rural Affairs.
The event was supported by the Consulate General and the office of the Mexico Tourism Board in Toronto.
